Instructions
- Wash and cut the cauliflower into florets.
- Peel and chop the potato into small cubes.
- Peel and dice the onion.
- Peel and mince the garlic cloves.
- Set the Instant Pot to Sauté mode and add the olive oil.
- Once the oil is hot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
- Add the cauliflower florets and potato cubes to the Instant Pot.
- Pour in the vegetable broth and stir to combine all ingredients.
- Close the Instant Pot lid and set the valve to sealing position.
- Cancel the Sauté mode and set the Instant Pot to Manual/Pressure Cook on High pressure for 2 minutes.
- Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully do a quick release for any remaining pressure.
- Open the lid and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches to puree.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, optionally garnished with a drizzle of olive oil, fresh herbs, or croutons.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
