Delicious vegan lamingtons made with semolina, coated in shredded coconut for a delightful treat. These sweet, tender squares are perfect for any occasion, offering a unique twist on the classic dessert. Instructions
- Line a 20x25cm baking dish with plastic wrap.
- In a large saucepan, combine oat milk, rum, wheat semolina, sugar, and cocoa powder.
- Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble.
- Remove from heat and stir in the dark chocolate until fully melted and combined.
- Add 100g of shredded coconut to the mixture and mix well.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Let it cool to room temperature, then refrigerate for at least 3 hours until firm.
- Remove from the refrigerator and cut into cubes.
- Roll each cube in the remaining shredded coconut until fully coated.
- Store the lamingtons in an airtight container in the refrigerator for up to 7 days.
- Serve chilled and enjoy!
