Instructions
- You can make normal crepes or gluten-free crepes it's up to you. Prepare the vegan crepes according to the 'vegan-crepes' recipe. This should yield about 8 crepes.
- While the crepes are cooling slightly, gently wash and dry the fresh raspberries.
- Chop the vegan dark chocolate and melt it using a double boiler or in the microwave in 30-second intervals, stirring between each interval until smooth. Set aside to cool slightly.
- To assemble, lay a crepe flat on a plate.
- Spread about 1-2 tablespoons of raspberry jam in the center of the crepe, leaving a border around the edges.
- Fold the crepe in half, and then in half again to form a triangle (or roll it up if you prefer).
- Repeat with the remaining crepes and jam.
- Arrange 2-3 filled crepes on each serving plate.
- Top each serving with a generous handful of fresh raspberries.
- Using a spoon or a piping bag, drizzle the melted chocolate over the crepes and raspberries in a decorative pattern.
- For an extra touch of indulgence, you can dust the crepes with powdered sugar or serve with a dollop of vegan whipped cream on the side.
- Serve immediately while the crepes are still warm, the berries are fresh, and the chocolate is slightly warm.
- If you have any leftover filled crepes, store them in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving and add fresh berries, chocolate drizzle, and powdered sugar just before eating.
