A classic apple pie made gluten-free but just as delicious as the traditional version! Featuring a flaky, sweet crust filled with tender cinnamon-spiced apples and topped with a beautiful lattice or decorative top crust. This pie proves that gluten-free baking can be just as impressive and delicious as conventional baking.

Instructions
- Prepare two batches of gluten-free pie dough according to your recipe, adding one package of vanilla sugar to each batch for extra sweetness.
- Divide the dough into two roughly equal portions - one for the bottom crust and one for the top.
- Wrap each portion and chill while preparing the filling.
Apple Filling Instructions
- Peel, core, and cut the apples into evenly-sized cubes (about 1.5cm).
- Place the apples in a large pan with the sugar, cinnamon, and lemon juice.
- Cook over medium heat for 20 minutes, stirring occasionally, until the apples are tender but still hold their shape.
- Remove from heat and let cool until just warm to the touch.
Glaze Instructions
- Mix maple syrup and oat milk together in a small bowl until well combined.
Assembly and Baking Instructions
- Preheat your oven to 180°C (350°F).
- Grease a 22cm pie dish with vegan butter.
- On a lightly floured surface (use gluten-free flour!), roll out one portion of dough into a circle about 30cm in diameter. Remember, gluten-free dough can be more delicate, so handle it gently!
- Carefully transfer the rolled dough to your pie dish. If it breaks, don't panic - just patch it together in the dish, it'll bake up fine!
- Pour in your cooled apple filling, spreading it evenly.
- Roll out the second portion of dough for the top. You have options here: go for a full cover with decorative holes for steam, create a lattice pattern, or get creative with cut-out shapes!
- If doing a full cover, don't forget to cut several steam vents in the top.
- Brush the top crust with your maple-milk glaze.
- Bake for 45-50 minutes. After 30 minutes, cover the edges with aluminum foil to prevent over-browning.
- The pie is done when the crust is golden brown and you can see the filling bubbling through the vents.
- Let the pie cool completely before slicing - this helps the filling set properly.
