These rich and moist vegan chocolate muffins are infused with a hint of coffee, creating a deep and satisfying flavor. Perfect for any occasion, they make an indulgent treat whether for breakfast, dessert, or a midday snack. Easy to bake and impossible to resist.

Instructions

  1. Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease and flour the tin if not using liners.
  2. In a large bowl, mix together all the dry ingredients: flour, cocoa powder, sugar, baking soda, baking powder, salt, and instant coffee.
  3. Prepare the vegan buttermilk by mixing soy milk with lemon juice. Let it sit for a few minutes.
  4. Add the vegan buttermilk, oil, applesauce, and vinegar to the dry ingredients, and mix until just combined.
  5. Fold in 150g chocolate chips.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle leftover chocolate chips on top if desired.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
