Instructions

  1. Preheat the oven to 180°C (350°F) and line two 20x30 cm baking pans with parchment paper.
  2. Prepare the basic vegan vanilla sheet cake and basic vegan chocolate sheet cake batters according to their recipes. Pour the vanilla batter into one prepared baking pan and the chocolate batter into the other.
  3. Bake both cakes in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely.
  4. In a small bowl, combine the orange juice, rum, and grated orange peel.
  5. Once cooled, crumble the chocolate sheet cake into fine crumbs. Pour the orange mixture over the crumbs and mix well until fully combined.
  6. In a high-sided baking dish or an adjustable mold, place the cooled vanilla sheet cake.
  7. Spread a thin layer of apricot jam over the cooled vanilla sheet cake. Evenly distribute the chocolate-orange crumb mixture over the vanilla cake, pressing down gently to form an even layer.
  8. Prepare the chocolate glaze according to the recipe. Pour the glaze over the top of the layered cake, spreading it evenly with a spatula.
  9. Refrigerate the bars for at least 2 hours or until the glaze is set. Cut into bars and serve chilled. Store any leftovers in an airtight container in the refrigerator for up to one week.
