These vegan muffins get their perfect texture from a combination of applesauce and oil, while the sour cherries add bursts of flavor that perfectly complement the chocolate. Instructions
- Sift together flour and cocoa powder to remove any lumps.
- Add sugar, baking soda, baking powder, and salt.
- Whisk dry ingredients together until well combined.
- Mix soy milk and lemon juice in a measuring cup. This is your vegan buttermilk - let it sit for 5 minutes to curdle.
- Drain the sour cherries well and pat dry with paper towels.
- In another bowl, combine the sunflower oil, applesauce, and apple cider vinegar.
- Preheat your oven to 180°C (350°F).
- Line a 12-cup muffin tin with paper liners or grease and flour each cup.
- Make a well in the center of your dry ingredients.
- Pour in all wet ingredients (including the curdled soy milk mixture).
- Gently fold everything together until just combined. Don't overmix!
- Fold in the drained sour cherries.
- Divide the batter evenly among the muffin cups - they should be about ¾ full.
- Optional: top each muffin with an extra cherry.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes.
- Transfer to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 3 days.
- Can be frozen for up to 3 months. Thaw at room temperature.
