Instructions

  1. Sift together flour and cocoa powder to remove any lumps.
  2. Add sugar, baking soda, baking powder, and salt.
  3. Whisk dry ingredients together until well combined.
  4. Mix soy milk and lemon juice in a measuring cup. This is your vegan buttermilk - let it sit for 5 minutes to curdle.
  5. Drain the sour cherries well and pat dry with paper towels.
  6. In another bowl, combine the sunflower oil, applesauce, and apple cider vinegar.
  7. Preheat your oven to 180°C (350°F).
  8. Line a 12-cup muffin tin with paper liners or grease and flour each cup.
  9. Make a well in the center of your dry ingredients.
  10. Pour in all wet ingredients (including the curdled soy milk mixture).
  11. Gently fold everything together until just combined. Don't overmix!
  12. Fold in the drained sour cherries.
  13. Divide the batter evenly among the muffin cups - they should be about ¾ full.
  14. Optional: top each muffin with an extra cherry.
  15. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  16. Let muffins cool in the tin for 5 minutes.
  17. Transfer to a wire rack to cool completely.
  18. Store in an airtight container at room temperature for up to 3 days.
  19. Can be frozen for up to 3 months. Thaw at room temperature.
