Instructions

  1. Peel and chop the carrot into small pieces. Dice the onion and celery finely.

  3. Add the minced garlic to the pot and cook for an additional minute, stirring frequently.
  4. Add the chopped carrot, celery, and red lentils to the pot. Pour in vegetable broth and stir well.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables and lentils are cooked.
  6. Use an immersion blender to puree the soup until smooth, or carefully transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
