Instructions
- Peel and chop the carrot into small pieces. Dice the onion and celery finely.
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent.
- Add the minced garlic to the pot and cook for an additional minute, stirring frequently.
- Add the chopped carrot, celery, and red lentils to the pot. Pour in vegetable broth and stir well.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables and lentils are cooked.
- Use an immersion blender to puree the soup until smooth, or carefully transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
- Taste and adjust the seasoning with salt and pepper. Garnish the soup with chopped parsley just before serving. Enjoy your hot and nourishing lentil soup.
