Quick and easy vegan crescent rolls that require no yeast or rising time. These soft, flaky rolls can be enjoyed plain or customized with various savory fillings and toppings. Made with a simple combination of flour, vegan dairy alternatives, and baking powder, they're perfect for when you want fresh, warm bread without the wait. Great for breakfast, as a side with soups, or as a snack any time of day.

Instructions

  1. In a large bowl, combine the bread flour, baking powder, and salt. Mix well.
  2. Add the vegan sour cream, soy yoghurt, and sunflower oil to the dry ingredients. Mix until a cohesive dough forms.
  3. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  4. Sprinkle your work surface with some of the all-purpose flour. Transfer the dough to the floured surface.
  5. Roll the dough into a circle approximately 5mm thick.
  6. Using a sharp knife or pizza cutter, cut the circle into 12 equal triangular pieces, like you would cut a pizza.
  7. If desired, add fillings of your choice to the wide end of each triangle. Options include vegan pesto, ketchup with oregano and vegan cheese for a pizza style, or leave them plain.
  8. Roll each triangle from the wide end to the point, creating a crescent shape. If using fillings, be sure to seal the edges to prevent leakage during baking.
  9. Place the rolled crescents on the prepared baking sheet, spacing them evenly apart.
  10. Brush the tops of the crescents with soy milk.
  11. If desired, sprinkle with toppings such as seeds, vegan grated cheese, or coarse salt.
  12. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  13. Remove from the oven and serve warm.
