Orange Cubes with Chocolate Ganache

Orange Cubes with Chocolate Ganache

Delight in the zesty freshness of our Orange Cubes with Chocolate Ganache. These gluten-free treats combine the bright flavors of orange with the richness of almonds, all topped with a luscious layer of chocolate ganache. The addition of apricot jam adds a subtle fruity sweetness that complements the citrus notes perfectly. Ideal for afternoon tea, special occasions, or as a luxurious snack, these cubes offer a sophisticated twist on traditional orange cake. Their gluten-free nature makes them accessible to those with dietary restrictions without compromising on taste or texture.

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a 20x30cm baking dish and line it with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the vanilla sugar, maple syrup, ground almonds, gluten-free flour, baking powder, baking soda, and salt. Mix well.
  3. Add the grated orange zest, vegetable oil, orange juice, and almond milk to the dry ingredients. Stir until you have a smooth batter.
  4. Pour the batter into your prepared baking dish, spreading it evenly with a spatula.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let cool in the pan for about 10 minutes. Then, using the parchment paper overhang, lift the cake out of the pan and transfer to a wire rack to cool completely.
  7. Once the cake has cooled, spread the apricot jam evenly over the top.
  8. Prepare the soft chocolate ganache according to its recipe, or if pre-made, gently warm it to spreading consistency.
  9. Pour the chocolate ganache over the jam layer, spreading it evenly to cover the entire surface.
  10. Refrigerate the cake for at least 1 hour to allow the ganache to set.
  11. Once set, remove from the refrigerator and cut into 24 cubes. For clean cuts, use a sharp knife and wipe it clean between cuts.
  12. These Orange Cubes with Chocolate Ganache are best enjoyed at room temperature. They can be stored in an airtight container in the refrigerator for up to 5 days. Let them come to room temperature before serving for the best flavor and texture.
  13. For an extra special touch, garnish each cube with a small slice of candied orange peel before serving.
