Apple Filling Instructions

  1. Peel and shred the apples. In a large bowl, mix the shredded apples with sugar, lemon juice, ground cinnamon, and breadcrumbs. Set aside.

Vegan Cottage Cheese Filling Instructions

  1. In a food processor, combine soy yoghurt, vanilla pudding powder, vanilla sugar, salt, sugar, and lemon juice. Process until smooth.
  2. Crumble the tofu and add it to the yoghurt mixture. Pulse a few times, leaving some small chunks of tofu for texture.

Assembly Instructions

  1. Prepare the sweet vegan pie dough according to its recipe. Refrigerate for 30 minutes.
  2. Preheat your oven to 180°C (350°F) and grease a 25x35cm baking dish.
  3. Roll out the chilled pie dough to fit the bottom of your baking dish and place it in.
  4. Cover the pie dough with 1 sheet of phyllo dough and prick it all over with a fork.
  5. Spread 100g of vegan sour cream over the phyllo.
  6. Now, let's layer! Add half of the poppy seed filling, then a sheet of phyllo.
  7. Next, add half of the vegan cottage cheese filling, then another sheet of phyllo.
  8. Spread 100g of sour cream, then add half of the walnut filling, and another sheet of phyllo.
  9. Spread 100g of sour cream, add half of the apple filling, another sheet of phyllo, and more sour cream.
  10. Repeat the entire layering process once more, using up the remaining fillings.
  11. Finish with two sheets of phyllo on top, spreading remaining sour cream between them and on the very top.
  12. Bake for about 90 minutes, or until the top is golden brown and crispy.
  13. Let it cool for at least 30 minutes before slicing. Serve and enjoy your homemade Prekmurska Gibanica!
