- Let's start by getting all our ingredients ready. Grab a large mixing bowl for our dry ingredients and another for the apples.
- In the large bowl, mix together the semolina, all-purpose flour, baking powder, sugar, and that pinch of salt. Give it a good whisk to make sure everything is well combined.
- Now for the star of the show - the apples! Grate them into the other bowl. No need to peel them unless you really want to, the skin adds nice color and nutrients.
- To your grated apples, add the vanilla sugar, lemon juice, and ground cinnamon. Mix it all together, but remember - don't squeeze out any of the juice from the apples. We want all that flavorful moisture in our pie!
- Grab your 20cm baking dish. No need to grease it - we're going for rustic here! Take about a quarter of your dry ingredient mix and sprinkle it evenly over the bottom of the dish.
- Now, add a third of your apple mixture on top of this layer. Spread it out evenly.
- Repeat this layering process two more times: dry mix, then apples. You should end up with three layers of apples, with some of the dry mix left over.
- Sprinkle the remaining dry mix over the top layer of apples.
- Here's a fun part - take a skewer (or a chopstick if you don't have a skewer) and poke it all the way through to the bottom of the dish. Do this all over the pie. This helps the layers meld together as it bakes.
- In a small saucepan, heat the oat milk and vegan butter together until the butter is melted and the mixture is warm.
- Slowly pour this warm milk and butter mixture all over your pie. Try to distribute it evenly.
- Now, we wait! Let the pie sit for about 15 minutes. This gives time for the milk and butter to soak into all those lovely layers.
- While you're waiting, go ahead and preheat your oven to 180°C (350°F).
- Once your 15 minutes are up, pop the pie into the preheated oven. Bake for 45-50 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
- When it's done, take it out of the oven and let it cool in the dish for at least 15 minutes before serving. This helps it set up a bit and makes it easier to slice.
