A comforting twist on classic vanilla pudding, enriched with nutritious millet. This creamy, wholesome dessert combines the subtle nutty flavor of millet with smooth vanilla pudding for a unique treat. Perfect served either warm or cold, it's a delightful way to incorporate whole grains into your desserts!
Instructions
- First, let's cook the millet. Give it a good rinse under cold water until the water runs clear.
- Cook the millet according to package instructions until it's completely soft. This is important - we want it to blend seamlessly into our pudding!
- Once cooked, drain the millet well and set aside. Don't worry if it seems a bit sticky, that's perfect for our pudding.
- Now for the pudding part! In a medium saucepan, whisk together the vanilla pudding powder, vanilla sugar, and regular sugar.
- Gradually add the oat milk while whisking constantly to prevent any lumps from forming.
- Cook the mixture according to the pudding package instructions, whisking continuously until it thickens.
- Once the pudding has thickened, stir in your cooked millet.
- Continue cooking on low heat for 2-3 minutes, stirring constantly. This helps the flavors meld together and ensures everything is heated through.
- You can enjoy this pudding either warm (like a cozy breakfast) or cold (as a refreshing dessert).
- If serving cold, let it cool to room temperature first, then refrigerate.
- To prevent a skin from forming on top while cooling, press a piece of plastic wrap directly onto the surface of the pudding.
- for serving you can top with fresh fruit, a sprinkle of cinnamon, a dollop of whipped cream, or a drizzle of maple syrup.
- Store in an airtight container in the refrigerator for up to 5 days.
- When serving from the fridge, give it a good stir to ensure the millet is evenly distributed.
Notes
- Make sure your millet is really well-cooked - undercooked grains will be noticeable in the smooth pudding.
- If your pudding becomes too thick after cooling, you can thin it with a splash of oat milk.
- For a creamier texture, you can blend half of the cooked millet before adding it to the pudding.
- If reheating, do so gently on low heat or in short bursts in the microwave, stirring well between bursts.
