A rich and indulgent vegan chocolate rice pudding that combines the comforting texture of rice with the deep flavor of chocolate. Enhanced with a hint of vanilla and a touch of rum, this dessert is perfect for chocolate lovers. Made with oat milk for a creamy dairy-free experience, it's a decadent twist on traditional rice pudding.
Chocolate Rice Pudding Instructions
- In a medium saucepan, combine the rice (short grain rice if you have it), oat milk, and a pinch of salt. Bring to a gentle boil over medium heat.
- Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the rice is tender and the mixture has started to thicken.
- While the rice is cooking, chop the cooking chocolate into small pieces.
- Once the rice is tender, add the vanilla sugar, chopped cooking chocolate, and 2 tablespoons of cocoa powder to the pan. Stir until the chocolate has melted and is fully incorporated.
- Add the rum and stir to combine. If the pudding is too thick, you can add a little more oat milk to reach your desired consistency.
- Continue to cook for another 5-10 minutes, stirring frequently, until the pudding reaches your preferred thickness.
- Remove from heat and let it cool slightly. The pudding will continue to thicken as it cools.
- Serve warm or chilled, sprinkled with the remaining cocoa powder on top for an extra chocolate boost.
