A rich and indulgent vegan chocolate rice pudding that combines the comforting texture of rice with the deep flavor of chocolate. Enhanced with a hint of vanilla and a touch of rum, this dessert is perfect for chocolate lovers. Made with oat milk for a creamy dairy-free experience, it's a decadent twist on traditional rice pudding.

Chocolate Rice Pudding Instructions

  1. In a medium saucepan, combine the rice (short grain rice if you have it), oat milk, and a pinch of salt. Bring to a gentle boil over medium heat.
  2. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the rice is tender and the mixture has started to thicken.
  3. While the rice is cooking, chop the cooking chocolate into small pieces.
  4. Once the rice is tender, add the vanilla sugar, chopped cooking chocolate, and 2 tablespoons of cocoa powder to the pan. Stir until the chocolate has melted and is fully incorporated.
  5. Add the rum and stir to combine. If the pudding is too thick, you can add a little more oat milk to reach your desired consistency.
  6. Continue to cook for another 5-10 minutes, stirring frequently, until the pudding reaches your preferred thickness.
  7. Remove from heat and let it cool slightly. The pudding will continue to thicken as it cools.
  8. Serve warm or chilled, sprinkled with the remaining cocoa powder on top for an extra chocolate boost.
