Rice Pudding Instructions

  1. In a medium saucepan, combine the rice (short grain rice if you have it), oat milk and a pinch of salt. Bring to a gentle boil over medium heat.
  2. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the rice is tender and the mixture has thickened.
  3. Stir in the vanilla sugar, regular sugar, and 2.5 teaspoons of ground cinnamon. Mix well.
  4. Continue to cook for another 5 minutes, stirring frequently, until the pudding reaches your desired consistency.
  5. Remove from heat and let it cool slightly. The pudding will continue to thicken as it cools.
  6. Serve warm or chilled, sprinkled with the remaining ground cinnamon on top.

Notes

  • Stir often near the end—rice pudding thickens quickly and can catch on the bottom.
  • Use low heat after boiling to prevent scorching and keep it creamy.
  • It will thicken as it cools; add a splash of oat milk when reheating if you want it looser.
  • Short-grain rice gives the creamiest texture, but other rice works too (may take a bit longer).
