Instructions

  1. Cut the zucchini into slices and finely chop the onion.
  2. In a large pot, warm 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until it is soft and translucent.
  3. Stir in the minced garlic and cook for another minute, making sure to stir continuously.
  4. Add the sliced zucchini and pour in vegetable broth. Stir everything together and bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer and cook for 20 minutes, or until the zucchini is very tender.
  6. Use an immersion blender to puree the soup until smooth, or carefully transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
  7. Stir in vegan sour cream and gently heat the soup over low heat without bringing it to a boil.
  8. Season with salt and pepper, adjusting to taste. Serve the soup hot and enjoy its creamy texture and delicate flavor.
