This sophisticated cake combines different textures and intensities of blueberry flavor for a stunning dessert that's perfect for special occasions.

Instructions
- Put 2 cans of coconut milk in the refrigerator overnight to separate the cream from the liquid. The whipping cream should be chilled as well.
Base Instructions
- Prepare a 26cm springform pan or adjustable cake ring (set to 25-26cm). If using a cake ring, place it on a lined plate or cake board.
- Crush the butter cookies into fine crumbs using a food processor or rolling pin.
- Melt the vegan butter and mix with cookie crumbs until well combined.
- Press mixture firmly into the bottom of your pan/ring.
- Refrigerate while preparing next layer.
Blueberry-Yogurt Layer Instructions
- Cook blueberries with sugar in a pot until softened.
- Scoop the separated cream from the coconut milk (reserve water for another use).
- Blend cooked blueberries, coconut cream, and yoghurt until smooth.
- Heat mixture slightly in a pot.
- Prepare agar according to package instructions for cold creams.
- Mix agar into the blueberry-yoghurt mixture and pour over cookie base.
- Refrigerate for 1 hour until set.
Yogurt Layer Instructions
- Scoop the separated cream from both cans of coconut milk.
- Combine coconut cream, yoghurt, lemon juice, and sugar in a pot.
- Heat mixture gently while stirring.
- Prepare agar according to package instructions for cold creams.
- Mix agar into yoghurt mixture and pour over set blueberry layer.
- Refrigerate for 1 hour until set.
Blueberry Jelly Instructions
- Cook blueberries with sugar and water until softened.
- Prepare agar according to package instructions for cold preparations.
- Mix agar into blueberry mixture and pour over set yoghurt layer.
- Refrigerate overnight before serving.
- Store in an airtight container in the refrigerator for up to 5 days.
- Keep cake ring in place until ready to serve.
