Blueberry-Yogurt Layer Cake

Instructions

  1. Put 2 cans of coconut milk in the refrigerator overnight to separate the cream from the liquid. The whipping cream should be chilled as well.

Base Instructions

  1. Prepare a 26cm springform pan or adjustable cake ring (set to 25-26cm). If using a cake ring, place it on a lined plate or cake board.
  2. Crush the butter cookies into fine crumbs using a food processor or rolling pin.
  3. Melt the vegan butter and mix with cookie crumbs until well combined.
  4. Press mixture firmly into the bottom of your pan/ring.
  5. Refrigerate while preparing next layer.

Blueberry-Yogurt Layer Instructions

  1. Cook blueberries with sugar in a pot until softened.
  2. Scoop the separated cream from the coconut milk (reserve water for another use).
  3. Blend cooked blueberries, coconut cream, and yoghurt until smooth.
  4. Heat mixture slightly in a pot.
  5. Prepare agar according to package instructions for cold creams.
  6. Mix agar into the blueberry-yoghurt mixture and pour over cookie base.
  7. Refrigerate for 1 hour until set.

Yogurt Layer Instructions

  1. Scoop the separated cream from both cans of coconut milk.
  2. Combine coconut cream, yoghurt, lemon juice, and sugar in a pot.
  3. Heat mixture gently while stirring.
  4. Prepare agar according to package instructions for cold creams.
  5. Mix agar into yoghurt mixture and pour over set blueberry layer.
  6. Refrigerate for 1 hour until set.

Blueberry Jelly Instructions

  1. Cook blueberries with sugar and water until softened.
  2. Prepare agar according to package instructions for cold preparations.
  3. Mix agar into blueberry mixture and pour over set yoghurt layer.
  4. Refrigerate overnight before serving.
  5. Store in an airtight container in the refrigerator for up to 5 days.
  6. Keep cake ring in place until ready to serve.
