Cups Instructions
- Chill the canned coconut milk overnight to separate the cream.
- Crush the vegan butter cookies (use gluten free if you want) into fine crumbs and spoon them into the bottom of each cup.
- In a bowl, mix the peanut butter with the separated coconut cream until smooth and creamy.
- Melt the cooking chocolate, then mix it with a little coconut cream to create a smooth chocolate layer.
- Fill each cup: add the peanut layer first, then top with the chocolate layer (or swirl them together if you prefer).
- Refrigerate the cups for at least 2 hours, or until set.
- Top each cup with soft chocolate ganache and a sprinkle of chopped peanuts before serving.
Notes
- Use coconut cream (the thick part) for the fillings; save the coconut water for smoothies or oats.
- If the chocolate starts to thicken while mixing, warm it very gently and stir again.
