Cups Instructions

  1. Chill the canned coconut milk overnight to separate the cream.
  2. Crush the vegan butter cookies (use gluten free if you want) into fine crumbs and spoon them into the bottom of each cup.
  3. In a bowl, mix the peanut butter with the separated coconut cream until smooth and creamy.
  4. Melt the cooking chocolate, then mix it with a little coconut cream to create a smooth chocolate layer.
  5. Fill each cup: add the peanut layer first, then top with the chocolate layer (or swirl them together if you prefer).
  6. Refrigerate the cups for at least 2 hours, or until set.
  7. Top each cup with soft chocolate ganache and a sprinkle of chopped peanuts before serving.

Notes

  • Use coconut cream (the thick part) for the fillings; save the coconut water for smoothies or oats.
  • If the chocolate starts to thicken while mixing, warm it very gently and stir again.
