This decadent dessert features a crisp vegan pie crust filled with a luscious chocolate ganache made from high-quality cooking chocolate and vegan cream. Instructions

  1. The night before, refrigerate the can of coconut milk to allow the cream and water to separate.
  2. Prepare the sweet vegan pie dough according to its recipe and place it in a 23cm loose-bottomed tart tin.
  3. To blind bake the crust: Preheat the oven to 180°C (350°F). Line the pie crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment. Bake for an additional 5-10 minutes until the crust is golden. Let it cool completely.
  4. Chop the cooking chocolate into small pieces and place them in a heatproof bowl.
  5. In a small saucepan, heat the vegan cooking cream over medium heat until it just begins to simmer. Do not let it boil.
  6. Pour the hot cream over the chopped chocolate. Let it sit for a minute to soften the chocolate.
  7. Stir the mixture gently with a whisk or spatula until the chocolate is completely melted and the ganache is smooth and glossy.
  8. Melt the vegan butter and add it to the chocolate mixture along with the coconut cream (scooped from the top of the refrigerated can) and cocoa powder. Stir until well combined.
  9. Pour the chocolate mixture over the cooled pie crust, spreading it evenly.
  10. Refrigerate the pie for at least 2 hours or until the filling is set.
  11. In a large bowl, whip the vegan whipping cream with the cream stiffener according to package instructions until stiff peaks form.
  12. Spread the whipped cream over the chilled chocolate filling.
  13. Garnish the top of the pie with chocolate curls.
  14. Refrigerate the pie for another 30 minutes before serving to allow the whipped cream to set.
  15. Keep the pie refrigerated and consume within 3-4 days for best quality.
