Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease a 22cm cake pan and line the bottom with parchment paper.
  3. Prepare the egg replacer according to package instructions in a large bowl.
  4. Add sugar, vanilla sugar, soy milk, and oil to the prepared egg replacer. Mix well.
  5. In a separate bowl, whisk together flour, cocoa powder, baking powder, cinnamon, baking soda, and salt.
  6. Drain the canned cherries thoroughly.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in the drained cherries gently.
  9. Pour the batter into the prepared pan, smoothing the top with a spatula.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  12. Store in an airtight container in the refrigerator for up to a week.
  13. Let come to room temperature before serving for best flavor.
