No Bake Semolina Lamingtons

Delicious vegan lamingtons made with semolina, coated in shredded coconut for a delightful treat. Lamingtons Instructions

  1. Line a 20x25cm baking dish with plastic wrap (leave overhang for easy lifting).
  2. In a large saucepan, combine oat milk, rum, wheat semolina, sugar, and cocoa powder.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble.
  4. Remove from heat and stir in the dark chocolate until fully melted and combined.
  5. Add 100g of shredded coconut to the mixture and mix well.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Let it cool to room temperature, then refrigerate for at least 3 hours until firm.
  8. Lift out using the plastic wrap, then cut into cubes.
  9. Roll each cube in the remaining shredded coconut until fully coated.
  10. Store the lamingtons in an airtight container in the refrigerator for up to 7 days.
  11. Serve chilled and enjoy!

Notes

  • Stir constantly while cooking to prevent lumps and scorching on the bottom.
  • Let the slab firm up fully before cutting (a longer chill makes cleaner cubes).
  • If cutting sticks, lightly oil the knife and wipe between cuts.
