Quick and easy vegan crescent rolls with a hint of sweetness that require no yeast or rising time. These soft, flaky rolls can be enjoyed plain or filled with jam or chocolate spread for a delightful treat. Made with a simple combination of flours, vegan dairy alternatives, and baking powder, they're perfect for when you want fresh, warm pastries without the wait. Great for breakfast, brunch, or as a sweet snack with coffee or tea.
Instructions
- In a large bowl, combine the bread flour, 100g of all-purpose flour (reserve 50g for dusting), baking powder, vanilla sugar, sugar, and salt. Mix well.
- Add the vegan sour cream, soy yoghurt, and sunflower oil to the dry ingredients. Mix until a cohesive dough forms.
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Sprinkle your work surface with some of the reserved all-purpose flour. Transfer the dough to the floured surface.
- Roll the dough into a circle approximately 5mm thick.
- Using a sharp knife or pizza cutter, cut the circle into 12 equal triangular pieces, like you would cut a pizza.
- If desired, add a small spoonful of jam (preferably heat-stable) or vegan chocolate spread to the wide end of each triangle. Alternatively, leave them plain.
- Roll each triangle from the wide end to the point, creating a crescent shape. If using fillings, be sure to seal the edges to prevent leakage during baking.
- Place the rolled crescents on the prepared baking sheet, spacing them evenly apart.
- In a small bowl, mix the water and maple syrup. Brush this mixture over the tops of the crescents.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from the oven and serve warm.
Notes
- These rolls are best enjoyed on the same day they are baked.
- For best results with fillings, use heat-stable jam that won't run during baking.
- When adding fillings, be sure to seal the edges well to prevent leakage during baking.
- You can customize these with different flavors by varying the extracts or adding spices like cinnamon.
- If you don't have vanilla sugar, you can substitute with 2 teaspoons of regular sugar and 1 teaspoon of vanilla extract.
- If the dough seems too sticky, add a little more flour while rolling it out.
- These can be reheated briefly in the oven to restore some of their freshness if you have leftovers.
