Instructions
- Allow the vegan butter to soften by uncovering it and leaving it on a plate for 1-2 hours.
- Prepare the vegan egg replacer according to the package instructions.
- In a large bowl, combine the all-purpose flour, almond flour, sugar, vanilla sugar, baking powder, and salt. Mix well to ensure even distribution of the ingredients.
- Add the orange juice, grated orange peel, and softened vegan butter to the dry ingredients. Mix until a smooth dough forms. If the dough is too soft or sticky, add an extra tablespoon of flour at a time until the desired consistency is achieved.
- Cover the dough with plastic wrap and refrigerate it for at least one hour to firm up.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to a thickness of about 5mm. Use a round cookie cutter to cut out circles, then cut each circle in half to create semi-circles.
- Arrange the cookies on the prepared baking sheet, leaving a small gap between each one.
- Bake the cookies in the preheated oven for 10-12 minutes, or until they are lightly golden at the edges.
- Remove the cookies from the oven and allow them to cool completely on a wire rack.
- While the cookies are cooling, melt the cooking chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Once the cookies are cool, drizzle or dip them in the melted chocolate as desired. Allow the chocolate to set before serving.
- Store the decorated cookies in an airtight container at room temperature for up to two weeks.
