Doughnuts Instructions

  1. First things first, let's get your banana ready. You can mash it with a spoon/potato masher (if you don't mind a bit of texture) or blitz it in a food processor if you want it super smooth.
  2. Grab a bowl and mix your dry team together - that's your flour, baking powder, salt, and cinnamon.
  3. Melt your coconut oil if it isn't already liquid.
  4. Now combine your mashed banana and melted coconut oil with the dry ingredients. Mix it all together with a spatula or hand mixer until you've got a nice, uniform dough.
  5. Lightly grease the air fryer basket with a thin film of coconut oil to prevent sticking.
  6. Time to get your hands a bit messy! Roll the dough into small balls - think golf ball size. Pop them in your air fryer basket, but don't crowd them! Leave some room between each ball as they'll puff up while cooking.
  7. Set your air fryer to 170°C and cook for 5-7 minutes. Keep an eye on them after the 5-minute mark - we want golden brown, not charred! You'll probably need to cook these in two batches.
  8. Now for the fun part - if you want jam-filled doughnuts, grab a straw and poke a hole in each doughnut while they're still warm.
  9. Fill a piping bag fitted with a small opening with your apricot jam. Gently pipe a little jam into each doughnut - you’ll know it’s full when you feel a bit of resistance.
  10. Want to make them extra special? Give them a light dusting of powdered sugar just before serving.
  11. These little treats will keep well in an airtight container for up to a week - if they last that long!
