Gingerbread dough Instructions
- Prepare the vegan egg replacer according to the package instructions (using the amount listed). Let it sit for a minute to thicken.
- In a mixing bowl, beat the softened vegan butter and brown sugar until creamy.
- Mix in the agave syrup, maple syrup, and prepared egg replacer until smooth.
- Add the gingerbread spice mix, baking powder, and a pinch of salt (optional but recommended). Mix briefly.
- Add the flour and mix until you get a soft, slightly sticky dough. Shape into a disc, wrap, and chill for at least 30 minutes.
Shaping and baking Instructions
- Preheat the oven to 180°C (350°F). Line a sheet pan with parchment paper.
- For cut-out cookies: roll out the chilled dough on a lightly floured surface to about 6–7mm thickness, then cut into shapes.
- For round cookies: roll the dough into small balls (about 20–25g each) and lightly flatten on the tray.
- Bake for 12–15 minutes. For softer cookies, pull them out when they look set but are still a bit soft in the center.
- Cool on the tray for 10 minutes, then transfer to a rack to cool completely.
- Optional: dust with powdered sugar once fully cool.
- Store in an airtight container at room temperature for up to 3 weeks.
