Assembly Instructions

  1. Bake the basic vegan chocolate sheet cake according to the recipe and let it cool completely.
  2. Cut circles out of the cooled cake that fit the size of your cups.
  3. In a saucepan, cook the sour cherries with sugar and rum until hot and slightly syrupy (a gentle simmer is enough).
  4. Prepare the agar according to the package instructions, then mix it into the hot cherry mixture. Stir well and let it cool to lukewarm so it thickens slightly.
  5. Whip the vegan whipped cream until stiff.
  6. Assemble the cups by layering cake, then the cherry mixture, another layer of cake, and finally whipped cream.
  7. Refrigerate for at least 1 hour before serving. Store in an airtight container for up to a week.
