Assembly Instructions
- Bake the vanilla sheet cake according to the recipe and let it cool completely.
- In a high-sided baking dish or an adjustable mold, place the cooled vanilla sheet cake.
- Crush the Speculaas cookies (fine to medium crumbs).
- Whip the vegan whipped cream with the whipped cream stiffener until stiff peaks form.
- Gently fold the crushed Speculaas cookies into the whipped cream mixture.
- Spread the Speculaas spread evenly over the vanilla sheet cake.
- Spread the whipped cream and Speculaas cookie mixture evenly over the Speculaas spread. Refrigerate for 1 hour.
- Pour the soft chocolate ganache over the top, spreading it evenly with a spatula.
- Refrigerate the bars for at least 2 hours (or better overnight) until the ganache is set before slicing and serving.
Notes
- Cool the sheet cake completely before assembling so the Speculaas spread and cream don’t melt.
- Chill overnight for the cleanest slices.
- If the ganache is too warm, let it cool slightly so it doesn’t soak into the cream layer.
