Instructions
- In a large mixing bowl, combine the flour, instant dry yeast, salt, vanilla sugar, and sugar. Mix well.
- Add the lukewarm oat milk and sunflower oil to the dry ingredients. Knead the dough until it becomes smooth and elastic, about 10 minutes.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 30 minutes, or until it has doubled in size.
- Once risen, roll out the dough on a lightly floured surface into a rectangle or square, about 1 cm thick.
- Cut the dough into equal squares. Place a small amount of apricot jam in the center of each square.
- Fold the edges of each square over the jam, sealing well to form a bun.
- Place the buns in a greased 25cm round baking pan (grease with a little sunflower oil), leaving some space between each for rising.
- Cover the pan and let the buns rise for another 30 minutes.
- Preheat your oven to 180°C (350°F).
- Bake the buns for about 40 minutes, or until they turn golden brown.
- Remove from the oven and let cool slightly.
- Dust the warm buns with powdered sugar before serving.
Notes
- Warm the oat milk to lukewarm—hot milk can weaken the yeast.
- Use a thick/thermostable jam if possible to reduce leaking.
- Seal buns well and place seam-side down so they don’t open during baking.
- If the tops brown too quickly, loosely cover with foil for the last 10–15 minutes.
- Dust with powdered sugar while still warm so it sticks nicely.
