Delicious vegan thumbprint cookies filled with jam and topped with a sprinkle of powdered sugar. Perfect for any occasion.
Instructions
- Uncover the vegan butter and leave it on a plate for 1-2 hours to soften.
- In a large mixing bowl, cream together the vegan butter, sugar, and vanilla sugar until light and fluffy.
- Prepare the vegan egg replacer according to the package instructions and add it to the butter mixture. Mix until well combined.
- Add the grated lemon peel and mix until incorporated.
- In a separate bowl, combine the all-purpose flour, ground walnuts, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Shape the chilled dough into small balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Use your thumb or the end of a wooden spoon to make an indent in the center of each ball.
