Vegan Apple Quark Cake

Apple Topping Instructions

  1. Peel the apples and cut them into small cubes.
  2. In a bowl, toss the apples with sugar, lemon juice, and cinnamon. Set aside while you prepare the batter.

Batter Instructions

  1. Preheat the oven to 180°C.
  2. Add all batter ingredients to a food processor and blend until completely smooth and creamy. Scrape down the sides as needed.
  3. Let the batter sit for 3–5 minutes so the semolina can hydrate slightly (this helps the cake set nicely).

Baking and Chilling Instructions

  1. Grease a cake pan with vegan butter and dust it lightly with flour to prevent sticking.
  2. Pour the batter into the prepared pan and smooth the top.
  3. Scatter the apple topping evenly over the batter so it covers the surface.
  4. Bake for about 45 minutes, until the center is set (it should no longer look wet and will jiggle only slightly).
  5. Let cool on the counter for 1 hour, then refrigerate for at least 2 hours to fully set before slicing.
  6. Store in an airtight container in the fridge for up to 1 week.

Notes

  • This cake slices best when fully chilled — warm slices will be softer and more custardy.
  • If your apples are very juicy, cut them small and don’t let them sit too long before baking (so they don’t release too much liquid).
  • Semolina and pudding powder do the “setting” work here — letting the batter rest a few minutes helps.
  • If the top browns too quickly, loosely cover with aluminum foil for the last 10 minutes.
  • Want it extra cozy? Serve cold or slightly warmed with a spoon of vegan sour cream or yogurt.
