Instructions

  1. Preheat your oven to 220°C (430°F). If using a pizza stone, place it in the oven to heat up as well. I'm using electric pizza oven for this recipe.
  2. Prepare the pizza dough according to your recipe. Divide the dough into two equal portions and roll each portion into a circle about 1/4 inch thick.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5-7 minutes.
  4. Add the sliced bell pepper and zucchini to the skillet and cook for another 5 minutes until the vegetables are tender. Season with salt and pepper to taste. Remove from heat and let cool slightly.
  5. Spread a layer of pizza sauce over half of each dough circle, leaving a 1-inch border around the edges.
  6. Divide the sliced vegan salami evenly among the dough circles, placing them over the tomato purée.
  7. Top with the sautéed vegetables.
  8. Sprinkle the shredded vegan cheese over the filling.
  9. Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal. You can crimp the edges with a fork for a decorative touch and to ensure they are well-sealed.
  10. Place the calzones on a baking sheet lined with parchment paper or on a preheated pizza stone. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
