Instructions
- Preheat your oven to 220°C (430°F). If using a pizza stone, place it in the oven to heat up as well. I'm using electric pizza oven for this recipe.
- Prepare the pizza dough according to your recipe. Divide the dough into two equal portions and roll each portion into a circle about 1/4 inch thick.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5-7 minutes.
- Add the sliced bell pepper and zucchini to the skillet and cook for another 5 minutes until the vegetables are tender. Season with salt and pepper to taste. Remove from heat and let cool slightly.
- Spread a layer of pizza sauce over half of each dough circle, leaving a 1-inch border around the edges.
- Divide the sliced vegan salami evenly among the dough circles, placing them over the tomato purée.
- Top with the sautéed vegetables.
- Sprinkle the shredded vegan cheese over the filling.
- Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal. You can crimp the edges with a fork for a decorative touch and to ensure they are well-sealed.
- Place the calzones on a baking sheet lined with parchment paper or on a preheated pizza stone. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
