Carob cookie dough Instructions
- Prepare the vegan egg replacer according to the package instructions (using the amount listed). Let it sit for a minute to thicken.
- In a mixing bowl, beat the softened vegan butter with sugar, vanilla sugar, salt, and lemon zest until creamy.
- Mix in the prepared egg replacer until smooth and well combined.
- Add the flour and carob powder and mix until a dough forms. If the dough seems dry or crumbly, add oat milk 1 tablespoon at a time (only as needed).
- Shape the dough into a flat disc, wrap, and chill in the fridge for at least 30 minutes.
Rolling and baking Instructions
- Preheat the oven to 180°C (350°F). Line a sheet pan with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 5–7mm thickness.
- Cut out star shapes and place them on the sheet pan with a bit of space between them.
- Bake for 12–15 minutes, until the cookies look set and the edges are just slightly darker.
- Let cool on the tray for 10 minutes, then transfer to a rack and cool completely.
- Optional: dust with powdered sugar once fully cool.
- Store in an airtight container at room temperature for up to 3 weeks.

- Carob is naturally sweeter than cocoa, so these cookies don’t need extra sugar.
- Chilling the dough helps the stars keep sharp edges while baking.
- If your kitchen is warm and the dough softens while rolling, pop it back in the fridge for 10 minutes.
