Instructions
- Preheat your oven to 200°C (400°F).
- Peel and finely chop the 150g of onion. Peel and slice the 200g of carrots. Peel and cube the 300g of potatoes into roughly 1-inch pieces. Wash and chop the 100g of chard, separating the stems and leaves.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onions, carrot slices, salt and thyme. Sauté for about 5 minutes until the onions are translucent.
- Add the potato cubes and chard stems to the skillet. Cook for another 5 minutes, stirring occasionally.
- Transfer the vegetable mixture to a large baking dish, spreading it out evenly.
- Arrange the vegan fish sticks on top of the vegetable mixture.
- Scatter the chopped chard leaves over the fish sticks and vegetables.
- In a small bowl, mix together the vegan cooking cream, kala namak, sweet paprika, onion powder, garlic powder and black pepper.Pour the vegan cooking cream evenly over the entire dish, making sure to cover all the ingredients.
- Bake in the preheated oven for 30-35 minutes, or until the fish sticks are golden and crispy and the vegetables are tender.
- Remove from the oven and let it cool for 5 minutes before serving.
- Serve hot, garnished with fresh herbs if desired.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
