Instructions

  1. In a high-speed blender, combine the cashews, garlic powder, onion powder, smoked paprika, turmeric, Dijon mustard, tomato paste, nutritional yeast, salt, lemon juice and vegetable broth.
  2. Blend on high speed until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
  3. Once smooth, transfer the mixture to a saucepan.
  4. Heat over medium heat, stirring constantly, until the cheese sauce is hot and has thickened slightly, about 5-7 minutes.
  5. Taste and adjust seasoning if needed. You can add more salt, lemon juice, or spices to suit your preference.
  6. If the sauce becomes too thick, you can thin it out with a little more vegetable broth or water.
  7. Serve hot as a dip for nachos, use as a sauce for vegan mac and cheese, or drizzle over your favorite dishes.
  8. Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or vegetable broth if needed to reach the desired consistency.
