Instructions
- In a high-speed blender, combine the cashews, garlic powder, onion powder, smoked paprika, turmeric, Dijon mustard, tomato paste, nutritional yeast, salt, lemon juice and vegetable broth.
- Blend on high speed until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
- Once smooth, transfer the mixture to a saucepan.
- Heat over medium heat, stirring constantly, until the cheese sauce is hot and has thickened slightly, about 5-7 minutes.
- Taste and adjust seasoning if needed. You can add more salt, lemon juice, or spices to suit your preference.
- If the sauce becomes too thick, you can thin it out with a little more vegetable broth or water.
- Serve hot as a dip for nachos, use as a sauce for vegan mac and cheese, or drizzle over your favorite dishes.
- Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or vegetable broth if needed to reach the desired consistency.
