Instructions
- Finely chop the onions and mince the garlic if using.
- In a small skillet, melt 1 tablespoon of coconut oil over medium heat.
- Add the chopped onions and cook, stirring frequently, until they are golden brown and caramelized. This will take about 10-15 minutes. If using, add the minced garlic during the last 2-3 minutes of cooking to avoid burning it.
- Remove from heat and let the onions cool slightly.
- In a small bowl, combine the remaining solid coconut oil, caramelized onions, smoked paprika, salt, black pepper, and soy sauce if using. Mix well until all ingredients are thoroughly combined.
- Transfer the mixture to a container or mold. Smooth the top with a spatula.
- Refrigerate for at least 1 hour, or until the mixture is firm and solid.
- Once firm, the vegan onion lard is ready to use. Spread it on bread, use it as a cooking fat, or incorporate it into recipes where you would use traditional lard.
