Instructions

  1. Finely chop the onions and mince the garlic if using.
  2. In a small skillet, melt 1 tablespoon of coconut oil over medium heat.
  3. Add the chopped onions and cook, stirring frequently, until they are golden brown and caramelized. This will take about 10-15 minutes. If using, add the minced garlic during the last 2-3 minutes of cooking to avoid burning it.
  4. Remove from heat and let the onions cool slightly.
  5. In a small bowl, combine the remaining solid coconut oil, caramelized onions, smoked paprika, salt, black pepper, and soy sauce if using. Mix well until all ingredients are thoroughly combined.
  6. Transfer the mixture to a container or mold. Smooth the top with a spatula.
  7. Refrigerate for at least 1 hour, or until the mixture is firm and solid.
  8. Once firm, the vegan onion lard is ready to use. Spread it on bread, use it as a cooking fat, or incorporate it into recipes where you would use traditional lard.
  9. Store the vegan onion lard in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • Let the onions cool a bit before mixing into coconut oil so it doesn’t melt fully.
  • Coconut oil firmness depends on room temperature—store in the fridge for a “lard-like” texture.
  • Optional: omit soy sauce for a milder flavor; add a pinch more salt instead if needed.
