The addition of vegan yoghurt ensures a soft, delicate crumb, while the vanilla sugar adds a lovely aroma. Perfect for afternoon tea, dessert, or even breakfast, this cake celebrates the natural sweetness of plums in a plant-based treat that's sure to please vegans and non-vegans alike.

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a 30x20cm baking dish and line it with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, ground almonds, baking powder, vanilla sugar, baking soda, sugar, and ground cinnamon. Mix well.
  3. In a separate bowl, whisk the vegan yoghurt until smooth.
  4. Add the yoghurt to the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. Wash the plums, remove the pits, and cut them into quarters or eighths, depending on their size.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Arrange the plum pieces on top of the batter, gently pressing them in slightly.
  8. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for about 10 minutes.
  10. Transfer to a wire rack to cool completely.
  11. Once cooled, cut into squares and serve.
  12. This cake can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
