- Make the vegan egg replacer according to the package instructions (using the amount listed). Set aside for a minute to thicken.
- In a mixing bowl, beat the softened vegan butter with sugar, vanilla sugar, and a pinch of salt until creamy and smooth.
- Mix in the prepared egg replacer until well combined.
- Add the flour and mix until a dough forms. If it feels too dry or crumbly, add oat milk 1 tablespoon at a time (only as needed).
- Fold in the vegan chocolate chips. Shape the dough into a disc (for rolling) or a log (for slicing), then wrap and chill for at least 30 minutes.
Shaping and baking Instructions
- Preheat the oven to 180°C (350°F). Line a sheet pan with parchment paper.
- Shape the cookies: either roll the dough to about 5–7mm thickness and cut into shapes, or roll into small balls (about 20–25g each) and lightly flatten.
- Place cookies on the prepared sheet pan with a bit of space between them.
