Enjoy the flavors of traditional Greek gyros with this plant-based twist. These Homemade Soy Gyros use TVP (textured vegetable protein) soy strips to create a satisfying, meat-free alternative that's packed with protein and flavor. Seasoned with a blend of aromatic spices and cooked to perfection with sautéed onions and garlic, these soy gyros offer a delicious and healthier take on the classic street food. Perfect for stuffing into pita bread with your favorite toppings or serving over a Greek salad for a fulfilling meal.
Instructions
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the TVP soy strips to the boiling broth, reduce heat to low, and simmer for about 10 minutes, or until the soy strips have absorbed most of the liquid and are tender. Stir occasionally.
- While the soy strips are cooking, finely chop the onion and mince the garlic cloves.
- In a small bowl, mix together the onion powder, garlic powder, smoked paprika, sweet paprika, dried thyme, and salt to create your spice blend.
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet and cook for 3-5 minutes, until the onion is translucent and fragrant.
- Drain any excess liquid from the cooked soy strips using a colander or strainer.
- In a large bowl, toss the drained soy strips with the prepared spice blend, ensuring they're evenly coated.
- Add the seasoned soy strips to the skillet with the onions and garlic.
- Cook the mixture for 5-7 minutes, stirring frequently, until the soy strips are slightly crispy and golden brown.
- Taste and adjust seasoning if needed.
- Serve hot in pita bread with your choice of toppings such as sliced tomatoes, onions, lettuce, and vegan tzatziki sauce.
- Alternatively, serve over a Greek salad or with roasted vegetables for a lower-carb option.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through.
