Instructions
- Uncover the vegan butter and leave it on a plate for 1-2 hours to soften.
- Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
- Prepare the vegan egg replacer according to the instructions on the package.
- In a large mixing bowl, cream together the softened vegan butter and sugar until light and fluffy.
- Add the grated lemon peel and vegan egg replacer to the butter mixture. Mix until well combined.
- In a separate bowl, mix the baking powder with the shredded coconut.
- Gradually add the coconut mixture to the wet ingredients, mixing until a dough forms.
- Form small balls of dough and place them on the prepared baking pan, spacing them about 2 inches apart.
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Remove the cookies from the oven and let them cool on the baking pan for a few minutes before transferring them to a wire rack to cool completely.
- Store the cookies in an airtight container at room temperature for up to two weeks.
