Instructions
- Preheat your oven to 190°C (375°F). Grease a 23cm (9-inch) pie dish and set aside.
- Take one recipe's worth of the gluten-free sweet vegan pie dough and press it evenly into the bottom and up the sides of your prepared pie dish. Pop it in the fridge while you prepare the filling.
- Wash, peel, and grate your apples using the large holes of a box grater. You want about 1kg (2.2 lbs) of grated apple for a nice, full pie.
- In a large bowl, mix the grated apples, sugar, and cinnamon. Zest the lemon directly over the bowl, then cut it in half and squeeze in the juice of half the lemon. Give everything a good stir.
- Take your pie crust out of the fridge and pour in the apple mixture, spreading it out evenly.
- Now for the fun part! Take the remaining pie dough and crumble it with your fingers over the top of the apple filling. Don't worry about making it perfect - rustic is good!
- Pop your pie in the oven and bake for about 50 minutes, or until the top is golden brown and the filling is bubbling at the edges. If the top starts browning too quickly, cover it loosely with aluminum foil.
- Once done, take it out and let it cool on a wire rack for at least 30 minutes before slicing. This gives the filling a chance to set a bit.
- Serve warm or at room temperature. A scoop of dairy-free vanilla ice cream on top is heavenly, if you're feeling indulgent!
