- Preheat your oven to 180°C (350°F). Grease a 20x30cm baking dish and line it with parchment paper, leaving some overhang for easy removal.
- Prepare two recipes of gluten-free basic vegan pie dough according to its instructions.
- Take half of the prepared pie dough and press it evenly into the bottom of your prepared baking dish, creating a smooth base layer.
- In a food processor, combine the tofu, soy yoghurt, sugar, vanilla sugar, vanilla pudding powder, cornstarch, lemon juice, and salt. Process until the mixture is smooth and creamy, scraping down the sides as needed.
- Pour the filling mixture over the pie dough base in the baking dish, spreading it evenly.
- Take the remaining half of the pie dough and crumble it evenly over the top of the filling, creating a rustic, streusel-like topping.
- Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crumble topping is golden brown.
