Cake Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a 20x30cm baking pan and set aside.
  2. In a large bowl, mix together soy milk, sugar, oil, and vegan egg replacer until the sugar is dissolved.
  3. Add all-purpose flour and baking powder, and mix until you have a smooth batter.
  4. Fold in the ground poppy seeds and vinegar and mix again until well combined.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire cooling rack and let it cool completely.

  2. Spread the apricot jam evenly over the cooled cake.
  3. Pour the chocolate glaze over the jam-covered cake, spreading it evenly with a spatula.
  4. Refrigerate the cake for at least 2 hours or overnight before slicing and serving.
