Cake Instructions

  1. Preheat oven to 180°C (350°F). Line a 20x30cm baking pan with parchment paper (leave a little overhang for easy lifting) and set aside.
  2. In a large bowl, mix together soy milk, sugar, oil, and vegan egg replacer until the sugar is mostly dissolved.
  3. Add all-purpose flour and baking powder, and mix until you have a smooth batter.
  4. Fold in the ground poppy seeds and vinegar and mix again until well combined.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Lift it out using the parchment and transfer to a wire cooling rack to cool completely.
  7. Once the cake is cooled, place it back in the pan (or a serving tray) for glazing.

Chocolate Glaze Instructions

  1. Prepare the chocolate glaze: In a microwave-safe container, combine the cooking chocolate, vegan butter, and rum. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  2. Spread the apricot jam evenly over the cooled cake.
  3. Pour the chocolate glaze over the jam-covered cake, spreading it evenly with a spatula.
  4. Refrigerate the cake for at least 2 hours or overnight before slicing and serving.

Notes

  • Let the cake cool completely before adding jam/glaze so the layers stay distinct.
  • Microwave the glaze in short bursts and stir well to avoid scorching the chocolate.
  • For clean slices, chill well and wipe the knife between cuts.
