Cake Instructions
- Preheat oven to 180°C (350°F). Line a 20x30cm baking pan with parchment paper (leave a little overhang for easy lifting) and set aside.
- In a large bowl, mix together soy milk, sugar, oil, and vegan egg replacer until the sugar is mostly dissolved.
- Add all-purpose flour and baking powder, and mix until you have a smooth batter.
- Fold in the ground poppy seeds and vinegar and mix again until well combined.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Lift it out using the parchment and transfer to a wire cooling rack to cool completely.
- Once the cake is cooled, place it back in the pan (or a serving tray) for glazing.
Chocolate Glaze Instructions
- Prepare the chocolate glaze: In a microwave-safe container, combine the cooking chocolate, vegan butter, and rum. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
- Spread the apricot jam evenly over the cooled cake.
- Pour the chocolate glaze over the jam-covered cake, spreading it evenly with a spatula.
- Refrigerate the cake for at least 2 hours or overnight before slicing and serving.

- Let the cake cool completely before adding jam/glaze so the layers stay distinct.
- Microwave the glaze in short bursts and stir well to avoid scorching the chocolate.
