Enjoy this quick and easy Rice and Peas dish, a simple yet satisfying meal that comes together in one pot. The fragrant basmati rice is complemented by sweet peas and savory onions, creating a perfect balance of flavors and textures. This versatile side dish pairs well with a variety of main courses, or can stand alone as a light meal. With minimal prep and easy cooking, it's an ideal recipe for busy weeknights or when you need a quick and comforting dish.

Instructions

  1. Rinse the basmati rice in cold water until the water runs clear. This removes excess starch and helps prevent the rice from becoming sticky.
  2. Peel and finely chop the onion.
  3. In a medium-sized pot, combine the rinsed rice, chopped onion, and peas.
  4. Add 240ml of water to the pot (or follow the specific instructions on your rice package for the water-to-rice ratio).
  5. Add salt to taste. Start with about 1/4 teaspoon and adjust according to your preference.
  6. Stir all the ingredients together.
  7. Place the pot over high heat and bring the mixture to a boil.
  8. Once boiling, reduce the heat to the lowest setting, cover the pot with a tight-fitting lid, and let it simmer for about 15-18 minutes, or until the rice is tender and has absorbed all the water.
  9. After the cooking time is up, remove the pot from the heat but keep it covered. Let it sit for an additional 5 minutes to allow the rice to absorb any remaining moisture and become fluffy.
  10. After 5 minutes, remove the lid and fluff the rice gently with a fork, mixing the peas and onions throughout.
  11. Taste and adjust seasoning if necessary.
  12. Serve hot as a side dish or as a light main course.
  13. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a pan with a splash of water.
