The fragrant basmati rice is complemented by sweet peas and savory onions, creating a perfect balance of flavors and textures. This versatile side dish pairs well with a variety of main courses, or can stand alone as a light meal. With minimal prep and easy cooking, it's an ideal recipe for busy weeknights or when you need a quick and comforting dish.
Instructions
- Rinse the basmati rice in cold water until the water runs clear. This removes excess starch and helps prevent the rice from becoming sticky.
- Peel and finely chop the onion.
- In a medium-sized pot, combine the rinsed rice, chopped onion, and peas.
- Add 240ml of water to the pot (or follow the specific instructions on your rice package for the water-to-rice ratio).
- Add salt to taste. Start with about 1/4 teaspoon and adjust according to your preference.
- Stir all the ingredients together.
- Place the pot over high heat and bring the mixture to a boil.
- Once boiling, reduce the heat to the lowest setting, cover the pot with a tight-fitting lid, and let it simmer for about 15-18 minutes, or until the rice is tender and has absorbed all the water.
- After the cooking time is up, remove the pot from the heat but keep it covered. Let it sit for an additional 5 minutes to allow the rice to absorb any remaining moisture and become fluffy.
- After 5 minutes, remove the lid and fluff the rice gently with a fork, mixing the peas and onions throughout.
- Taste and adjust seasoning if necessary.
- Serve hot as a side dish or as a light main course.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a pan with a splash of water.
