Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a 25x35 cm baking dish with parchment paper.
  2. In a large bowl, mix together the all-purpose flour, vegan egg replacer, sugar, vanilla sugar, baking powder, baking soda, salt, and grated lemon peel.
  3. In a separate bowl, whisk together the sunflower oil, vegan yoghurt, soy milk, and apple cider vinegar until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until smooth and well combined.
  5. Peel, core, and thinly slice the apples.
  6. In a bowl, mix the sliced apples with the vanilla sugar, sugar, and ground cinnamon until well coated.
  7. Pour half of the batter into the prepared baking dish and spread it out evenly.
  8. Evenly distribute the apple filling over the batter.
  9. Pour the remaining batter over the apple filling and spread it out evenly.
  10. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove from the oven and let the cake cool completely in the baking dish before slicing and serving.
