Instructions
- Preheat the oven to 180°C (350°F). Grease and line a 25x35 cm baking dish with parchment paper.
- In a large bowl, mix together the all-purpose flour, vegan egg replacer, sugar, vanilla sugar, baking powder, baking soda, salt, and grated lemon peel.
- In a separate bowl, whisk together the sunflower oil, vegan yoghurt, soy milk, and apple cider vinegar until well combined.
- Add the wet ingredients to the dry ingredients and mix until smooth and well combined.
- Peel, core, and thinly slice the apples.
- In a bowl, mix the sliced apples with the vanilla sugar, sugar, and ground cinnamon until well coated.
- Pour half of the batter into the prepared baking dish and spread it out evenly.
- Evenly distribute the apple filling over the batter.
- Pour the remaining batter over the apple filling and spread it out evenly.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool completely in the baking dish before slicing and serving.
