A simplified vegan version of the classic Austrian shredded pancake dish, made light and fluffy with the addition of sparkling water. This basic version of Kaiserschmarrn maintains the traditional texture while using plant-based ingredients, creating a perfectly satisfying breakfast or dessert that can be customized with your favorite toppings.

Instructions

  1. In a large bowl, combine flour, baking powder, sugar, and salt. Mix well.
  2. Combine soy milk and apple cider vinegar in a bowl. Let stand for a minute to curdle.
  3. Add sparkling water to the milk mixture.
  4. Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter.
  5. Optional: If you want to add raisins, soak 30g raisins in warm plant milk for a few minutes, drain, and fold them into the batter.
  6. Heat vegetable oil in a large non-stick pan over medium heat.
  7. Pour the batter into the heated pan and cook until bubbles form on the surface and the bottom is golden brown.
  8. Flip the pancake and cook for another minute.
  9. Using two spatulas or a fork, tear the pancake into bite-sized pieces.
  10. Continue cooking, stirring occasionally, until all pieces are golden brown and slightly crispy.
  11. Serve hot, dusted with powdered sugar, or topped with applesauce, jam, or your favorite fruit compote.
