Instructions

  1. Cook the gluten-free pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process and cool the pasta. Set aside.
  2. If using dried green lentils, cook them according to package instructions until tender. Drain and let cool. If using canned lentils, drain and rinse them.
  3. Drain and rinse the canned chickpeas.
  4. In a small bowl, whisk together 150 grams of vegan yoghurt, 1 tablespoon of mustard, 1 teaspoon of salt, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and 1 tablespoon of lemon juice until well combined.
  5. In a large bowl, combine the cooked pasta, chickpeas, and green lentils.
  6. Pour the dressing over the salad and toss well to ensure everything is evenly coated.
  7. Adjust seasoning with additional salt or lemon juice if needed. Garnish with fresh parsley if desired.
