Instructions

  1. Peel and dice the onion and potato. Peel the butternut squash, remove the seeds, and cut into 1-inch cubes. Finely chop the celery.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and celery, and sauté for 3-4 minutes until the onion becomes translucent.
  3. Add the cubed butternut squash and potato to the pot. Stir to combine with the onion and celery.
  4. Pour in the vegetable broth, ensuring all vegetables are covered. If needed, add a bit more broth or water.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 20-25 minutes, or until the squash and potato are tender when pierced with a fork.
