Instructions
- Peel and dice the onion and potato. Peel the butternut squash, remove the seeds, and cut into 1-inch cubes. Finely chop the celery.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and celery, and sauté for 3-4 minutes until the onion becomes translucent.
- Add the cubed butternut squash and potato to the pot. Stir to combine with the onion and celery.
- Pour in the vegetable broth, ensuring all vegetables are covered. If needed, add a bit more broth or water.
