Instructions
- Peel and chop the carrots into small pieces. Dice the onion finely.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent and soft.
- Add the minced garlic to the pot and cook for an additional minute, stirring constantly to prevent burning.
- Add the chopped carrots and vegetable broth to the pot. Stir to combine, then bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the carrots are very tender.
- Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, cool the soup and carefully transfer it in batches to a blender and blend until smooth, then return it to the pot.
- Season the blended soup with salt and pepper, adjusting to taste. Heat the soup gently over low heat if necessary, and serve hot.
