Instructions

  1. Peel and chop the carrots into small pieces. Dice the onion finely.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent and soft.
  3. Add the minced garlic to the pot and cook for an additional minute, stirring constantly to prevent burning.
  4. Add the chopped carrots and vegetable broth to the pot. Stir to combine, then bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the carrots are very tender.
  6. Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, cool the soup and carefully transfer it in batches to a blender and blend until smooth, then return it to the pot.
  7. Season the blended soup with salt and pepper, adjusting to taste. Heat the soup gently over low heat if necessary, and serve hot.
